The face of The Curious Oyster is Michael Ellis—a professionally trained chef with years of experience across some of Central Florida’s most respected kitchens. From farm-to-table restaurants to high-volume service environments, that experience shapes every detail of how oysters are handled, presented, and served.
What started as an idea quickly turned into something more. After the first event—serving hundreds of oysters in a single day—it became clear there was a demand for something different. Not just oysters, but a curated experience built around them.
Today, The Curious Oyster brings that experience to weddings, private events, and community gatherings across central Florida.
